April 11th - it's a national holiday

So you have a good size warmed pot with melted cheese, wine and various herbs all mixed together for dip.
You take a piece of bread or meat and you dip it in the cheese concoction and there you go - a month full of savory goodness. I've just learned about this because of course I'm not sophisticated at all, but it sounds interesting and delicious~ national cheese fondue day

Oooooo! I love me some cheese fondue. Or any of its permutations. "Welsh Rarebit" is another form, often made with cheddar, beer, and sometimes mustard and Worcestershire sauce, then served over toast and broiled. A friend of mine makes a similar beer-cheese soup that's more soupy than saucy, that he serves in bread bowls.

Damnit, now I'm hungry and I just ate!

Typically traditional fondue is made with a selection of French white cheeses and white wine, sometimes with various spices and/or garlic. My Mom used to throw fondue parties back in the 70's, with all sorts of bread and fruit and vegetables to dip in the fondue. She'd also make chocolate fondue with a plate of fruit, and we'd have one pot of hot oil and a selection of bite-size meats to fry in it.
