Home Fries or Hash Browns-Discuss ( NO PO)

Post by Z is for Zangie » Mon May 02, 2022 1:41 am

Just to be clear, home fries to me are sliced fried potatoes, with onions especially, not cubes, not french fries, and not shredded potatoes. (when I googled them that is mostly what I got...lol..).Home Fries, hands down. I will eat hash browns ( shredded like in restaurants or the patties, like Mickey D's)but, Home Fries ( real ones) are the bomb.

Potatoes in general are my favorite food.

Which sucks, because I'm not supposed to eat them.

Love hash browns, but also fried potatoes (which is what you're calling "Home Fries" but we never called them that.) Also "Jojos" which I have a great recipe for.

Home fries. With green peppers and onions. Add a side of jelly bread for one of my favorite suppers

Also one of my favorite foods...I have never made my own JOJO's, Rick loves them, but I have found the ones you purchase from restaurants, etc are usually undercooked and too thick for me. I call them fried potatoes also , but, they are never called that in restaurants, at least around here.

If I ever catch you poaching your halibut, I will beat you until it stops being funny.

I have a chef’s steel mandolin for slicing potatoes (among other things), and I make a few good things from that. One of which is home fries. Potatoes, onion, paprika, some thin-sliced peppers, and other stuff depending on the mood. Cooked in a cast iron skillet.

I had never heard of Mandolins in the context till the other day ( Boss has one, think for sausages?) and nos you mention it and yes, has to be cast iron skillet, those sound yummy, though I might not do the paprika

I have some great pots & pans. A few LeCreuset pots, a full AllClad set, and six pieces of cast iron. Two oval flat skillets, one round flat skillet with a very smooth surface, and three skillets with 3-4” sides.
