Onions...like em? Don't? Have favorites?

I like ( love)them all ( though never have had shallots...) I think they are good in different places...Red Onions and Scallions are my favorite. Red on sandwiches ( especially cheeseburgers and Italian subs) and in salads and pasta salad also. Yellow onions have the strongest odor and are a bit too much for a lot of stuff to me..ok for hot dogs and a few other things...Scallions ( green onions) are great for just eating raw and in my taco dip...lol

Scallions (green onions) are a necessity for some kinds of dishes. I eat a lot of plain yellow onions, usually caramelized. I'm not a fan of Walla-Walla Sweets even though they look like big yellow onions. White onions are fine for this and that. Generally I could care less about red onions. They have their place I suppose, but they aren't something I cook with.

I've cooked with shallots and I like them, but I haven't really developed a particular fondness for them that spurs me to buy them. If used properly they can be the base of a magnificent white sauce. Or to add a subtle sweet onion flavor to a soup or salad.

Shallots are more subtle. In a world where bigger-better-bolder is always considered optimal, things that are subtle tend to be lost. They are great in a mignonette for oysters, for example.

I don’t think there’s any onion I don’t use in cooking at one time or another. I use Spanish onions when making a marinara base sauce (along with garlic, cubanelle pepper, oregano etc), potent small yellow onions if I’m doing a one-pot thing with chicken and potatoes, and yeah red onion slivers on sandwiches. I knew a kid, Craig, who lived next door when I was little. a he used to eat raw onions like they were apples.

Everybody likes red ✔️ it looks good on tomatoes and it's easy to spell
