Today is National Cheese Day...(NO PO)
As a kid I would only eat American Cheese and Velveeta ( which my mom used for her macaroni and cheese, which was pretty awesome even with fake cheese....lol...)I wouldn't even eat pizza because of the cheese. As I got older, I discovered that there are some cheeses I like...my two favorites for dipping in cocktail sauce are swiss cheese and hot pepper cheese ( and I will eat it in chunks by itself too. Then I discovered I liked pizza now, I prefer Mozzarella, but I will eat Provolone on it, or a mix. I love finely shredded Mozzarella on my salads also. I will leat cheddar if it is melted and I can dip tortilla chips in it, or in salads at restaurants if I can't get Mozzarella....but, mostly, as you can see, I favor the hard, white cheeses. I do not like the runny or soft ones at all. What are your favorites and/or which don't you like?

I love cheese, almost any kind except the blue cheeses and some flavored cheeses. If you look in my refrigerator right now you'll find Bandon Cheddar, Cougar Gold™, Parmigiano-Reggiano, Mozzarella, Cotija, and American-Neufchâtel cream cheese. Sometimes you'll see some Feta or Provolone in there too. I eat cheese most days.
I use Neufchâtel or Cougar Gold™ or both when making macaroni. Try it! Or simply cream cheese. (American Neufchâtel is little more than low-fat cream cheese.) Cotija is a dry Mexican cheese that's very crumbly and is great on tacos or on top of refried beans or Spanish rice.
